My new Cookbook, "Eat Like your LIFE Depends on it"

“Fresh. Fabulous. Food. There’s nothing more personal, or I dare say “intimate”, than the relationship we have with the food we choose to eat.”

I’m super excited to share with you my new cookbook, Eat Like Your LIFE Depends on it. We’ve been working on it for a year, and it FINALLY got published!

Every recipe in this book is low-glycemic and supports the goal of using fresh, organic, in-season ingredients. My family eats no processed foods, no harmful additives, and no junk food. There are special lifestyle tips within the book that will enlighten you along the way to eating in a clean, healthy, life-supporting way.

Before I tell you about some of the amazing recipes in “Eat Like Your LIFE Depends on it”, last week’s newsletter topic was “What is BPC-157 and who can it help?”, you can use this link HERE to get up to speed.

OK, back to today….. Do you work long hours, or have a hard time finding the time to eat better and feed your hungry family healthy foods? If so, read on about some of the tips you will discover in my new cookbook.

I must admit, it took me quite a while to figure out how to pull off the healthy eating routine we now practice at home. From rushed weekday mornings with a toddler, to entertaining large groups of friends and family on the weekends, eating healthy is one of my top (3) priorities. Not only do I need to nourish my family with home-cooked nutritious meals on a daily basis, but I also use the opportunity of entertaining to show our guests how they can eat healthy too!

So, what’s my secret for eating healthy everyday?

Simplicity is the trick! You’ve heard the saying, “Keep it simple, stupid!” Well, that’s my trick….

I cook meals with very few ingredients. They also have to be easy to find at my everyday grocery store. Yes, I’ll splurge on a hard to find fresh organic turkey from the farm for a special holiday; but day in, day out, I know where to find organic produce and protein along the perimeter aisles in my grocery store, and I can crank out my shopping list pronto!

Next, each meal has to take 20 minutes or less in preparation time. I’m okay if something has to cook in the oven for 30-45 minutes while I take care of other things around the house; but, when it comes to breakfast, it’s got to be fast or be something that we’ve made ahead of time!

For breakfast, our daughter loves her Opi-notes (n-oatmeal) or quick and easy Banana Pancakes. And for snacks, she’s all about her Banana Chocolate Chip Mini-Muffins or Hearty Guacamole Dip. I’ve included her favorites in the cookbook for your younger family members, or young at heart adults ;-)

I hate clean up, don’t you?

The good news is that when you avoid prepared processed foods and keep meal ingredients simple, the clean up is easy! I don’t prepare a lot of fancy sauces or gravies for my foods, and I’ll use my grill whenever I can.

One dish meals? Absolutely! I’ve got about 6-8 recipes that we’ll make routinely that give us some nice leftovers during the week.

But keep in mind, variety is the spice of life; especially when talking about food. No one wants to eat the same thing all the time! Food shouldn’t be boring. Our bodies need a variety of vitamins and minerals to stay heathy, so we make sure to rotate our daily meals to ensure that we are eating fish, beef, vegetarian, chicken on alternate days.

Food should be fun, easy and enjoyable!

I like tacos and ice cream, just like everyone else! And, I have no desire to deny myself of fun food. Keep in mind, you don’t need to give up the flavors you love to eat in a healthy way. All we need to do is enjoy our favorite foods without all the chemicals and nasty additives. Clean fresh ingredients are the name of the game!

Do you like cajun, southern, latin and island cuisine? There’s something for everyone to keep your meals interesting and lively!

Want to enjoy a mocktail or cocktail while entertaining? As many of you know, sugar throws your hormones off balance and contributes to obesity, diabetes, weight gain, heart disease, liver damage and inflammation. In the cookbook, I’ll show you how to make a healthy simple syrup recipe that you can use to sweeten up beverages so you don’t have to worry about the damaging effects of sugar.

Does someone in your household have a sweet tooth? Hey, there’s something special about rewarding yourself for a job well done. We all deserve to taste the sweet things in life. Some of you may have heard me talk about my love of cheesecake. Well, I don’t splurge very often, but darn it, I certainly will have some cheesecake for my birthday, LOL. Yes, my cheesecake, ice cream, carrot cake, snickerdoodle blondies and double-chocolate chip cookie recipes are included in the cookbook, too. They are all made with low-glycemic ingredients that are healthy for you too!

No boring salads or dinners allowed! 

Have you ever had a Cheeseburger salad? No? How about Grilled Peaches on a salad? I get bored with foods easily, so I’ve shared some unique, yet simple, recipes that you can change around depending on what’s in season on the produce stands.

The girls at home love spices, so I’ve learned to make Moroccan Meatballs, Dry Rub BBQ Ribs and Spicy Tuna Rolls. They seem to really like them, so I guess I’ve mastered those dishes that I’ve included, too!

For me, it’s the standard Skirt Steak with Salsa or Kabobs on the Grill. So, I’m super happy that it’s finally warmed up outside ;-)

A Take-Home Message

Well, it’s getting time to entertain again, and I’m thinking about a BIG family Seafood Boil with Yuca (Cassava) Fries, a simple fresh salad, and my daughter’s favorite Pumpkin Spice Custard for dessert. Ohhh, gotta fix some of Mama’s Lemonade for the kiddos. Yup, you guessed it, all these recipes are in the book too!
